Chilled Cucumber Avocado Soup with Chavrie Goat Cheese

This Chilled Cucumber Avocado Soup with Chavrie Goat Cheese is quite unique and absolutely delicious. The creamy fresh goat cheese and velvety avocados complement the crisp cucumbers with a touch of sweetness from coconut milk!

INGREDIENTS

  • 1 pkg. (5.3oz) Chavrie goat cheese
  • 3 ea. Seedless cucumber (peeled and cubed)
  • 2 ea. Ripe avocados
  • ΒΌ C Unsweetened coconut milk
  • 3 ea. Lime juice
  • 1 tsp. Cumin
  • 1 tsp. Tabasco
  • 1 Tbsp. Ginger minced
  • Salt and Pepper to season

INSTRUCTIONS

  1. Split the avocado in half, remove the pit and scoop pulp into a blender.
  2. Add cucumber pieces.
  3. Puree until smooth.
  4. Add coconut milk, lime juice, cumin, Tabasco, ginger and Chavrie, blend well.
  5. Season with salt and pepper.
  6. Chill well before serving.
