Roasted Asparagus with Chavrie Goat Cheese Dijon Sauce

Roasted asparagus tastes so good when cooked with a light coating of olive oil, salt and pepper! This Roasted Asparagus with Chavrie Goat Cheese Dijon Sauce adds to the goodness by topping roasted asparagus with capers, a quick and easy Dijon sauce with goat cheese.

INGREDIENTS

  • 1 1/2 lb. Fresh asparagus spears, trimmed, cleaned
  • 2 tsp. Extra-virgin olive oil
  • 1 pkg. 5.3 oz Chavrie Pyramid, Original
  • 1 tbsp. Whipping cream
  • 1 tsp. Dijon mustard
  • 2 tbsp. Capers, drained

INSTRUCTIONS

  1. Blanch asparagus for 1 – 1 1/2 minutes.
  2. Heat oven to 400° F. Arrange asparagus in single layer in shallow baking pan.
  3. Drizzle with olive oil. Bake 5 minutes or until desired doneness.
  4. In small microwavable bowl, mix Chavrie, cream and mustard.
  5. Microwave on High 30 seconds. Stir; microwave another 30 seconds or until warm.
  6. Stir in capers.
  7. Serve sauce with asparagus.
